Tasting Menu in Melbourne
A tasting menu is a fixed run of small courses. Rōnin takes it one step further as omakase: even the courses are the chef’s call, set by the day’s produce rather than a printed list.
How that differs from a normal tasting menu is covered on our omakase guide.
About Ten, Korean-Rooted
Roughly ten courses, sent one at a time, built on Korean fermentation, jang and charcoal with Australian seasonal produce. A$195 per guest, about two hours at the counter.
See the plating in the gallery.
Behind the Counter
Chef Liam Lee, Seoul-trained and formerly of Nomad and Firebird, plates every course in front of the ten seats.
