Dietary Requirements at Rōnin: What We Can and Cannot Do

This is the page we would rather you read before paying than after arriving. Rōnin is a ten seat omakase with one chef cooking a single sequence of about ten courses for the whole counter. Because of that, we cannot cater to dietary alterations. No swaps, no omissions, no separate versions.

That is not a policy we enjoy, it is the shape of the room. Below is what the omakase usually contains so you can decide honestly whether it is for you.

CONTAINS

What the Omakase Usually Includes

Seafood, including raw and cured fish and shellfish. Beef and other meats. Soy, in the form of jang: doenjang, gochujang and ganjang. Wheat, in noodles and some ferments. Sesame, chilli, garlic and alliums throughout. Eggs, dairy and nuts may appear. The exact courses change daily, so this list is a guide to what is likely, not a guarantee of what is absent.

CANNOT

What We Cannot Do

We cannot remove an ingredient from a course, replace a course, or cook a vegetarian, vegan, gluten free, halal or kosher version. We cannot guarantee that any course is free of a given allergen, because the kitchen is one bench and the ferments are shared. If an allergy is serious, please do not book.

CAN

What We Can Do

Tell you in advance, by email at info@roninomakase.com, what the current month’s courses are leaning towards, so you can judge. Seat a guest who chooses to skip a course without fuss. Mark an occasion. That is the honest extent of it.

PREGNANCY

A Note on Raw Courses

The omakase includes raw and cured seafood and meat. Guests who avoid those should treat the sitting as not suitable rather than ask for substitutions, which the counter cannot provide.

ELSEWHERE

If Rōnin Is Not the Right Room

Larger Korean dining rooms in the CBD with menus can handle most dietaries. We would rather point you to them than have a guest pay A$195 (no prepayment required) for courses they cannot eat. Korean restaurants in the CBD describes the alternatives plainly.
