A Different Kind of Counter
Omakase usually means Japanese Edomae sushi. Rōnin is Melbourne’s first to run the format through Korean cooking, opened in 2023 on Little Collins St. Same ten-seat counter, a different flavour language.

Fermentation, Jang, Charcoal
The courses lean on Korean building blocks: long fermentation, jang (the family of soybean and chilli pastes), live charcoal, and the multi-course structure of hanjungsik. Australian seasonal produce keeps the set moving through the year.

Trained in Seoul
Chef Liam Lee trained at Gyungbokgung Hanjungsik in Seoul, then led Melbourne kitchens at Nomad, Firebird and Studio Amaro before opening Rōnin. The Korean grounding is first-hand, not a theme.
